Vegan Star Anise Custards

Vegetarian and vegan food can be stylish and more-ish! Here's a good example:

Ingredients for 6 custards:

80g golden caster sugar
500ml soya cream
250ml soya milk
2 teaspoons Vege-gel (vegetarian gelatine)
10 star anise (including 6 well shaped ones)

  1. Put 4 of the star anise to ‘infuse’ in the soya milk for at least half an hour.
  2. Put the sugar, soya cream, soya milk (with star anises) into a saucepan.
  3. Sprinkle the Vege-gel over the mixture, whisking as you do so.
  4. Bring the mixture slowly to the boil, whisking all the time.
  5. Take off heat when the mixture starts to boil.
  6. Strain the mixture (through a sieve) into a jug and discard the star anises.
  7. Pour into ramekins and chill for at least 2 hours until set.
  8. Place a reserved star anise (not edible) on each custard.
