Yellow Split Pea Soup by Melanie Collie
This soup is loaded with protein and really sticks to your insides to give you loads of energy. Great for vegetarians and vegans, and also for anyone who is hungry after a workout but wants to eat well.
1 lb (450 gms) yellow split peas
1 onion (diced)
2 clove garlic (diced)
3 celery stalks (diced)
3 carrots (diced)
veg stock(organic or home made!)
Salt& pepper
Combine all ingredients into pot, add vegetable stock, bring to a boil and then lower to a simmer for 45 mins to 1 hour, until peas break down and are creamy.
